Description
My little twist on the classic Martini is the smoked rosemary olive oil. It may sound odd to dash in some oil to a cocktail, but trust me it works so well here!
Ingredients

- 2 1/2 oz dry gin
- 1/2 oz dry vermouth
- 1/4 oz olive being, I used some from a jar of Castelvetrano olives
- few drops olive oil
- optional: 1 bar spoon white sweet vermouth*
- Garnish: 2 rosemary sprigs and olive
Instructions
- On a fire safe surface take the rosemary and light on fire. Place a coupe over the smoked rosemary and let sit while you make the Martini.
- Add gin, vermouth, and olive brine to a mixing glass. Add ice to fill the glass 3/4 of the way. Using a bar spoon, mix for 30 seconds.
- With a hawthorn strainer, strain the martini into the smoked glass. Finish with a few drops of olive oil. Garnish with fresh rosemary sprig and olive.
Notes
*I like to add a bar spoon of white (blanc, blanco, bianco) vermouth to my Martinis for a bit of body.
